Easy Scotch Egg Recipe

Scotch Eggs (makes 12)


14 eggs
12 gluten free pork sausages, casing removed.
3tbsp mixed herbs
115g ground almonds
preheat oven to 180


Boil 12 eggs for 4 mins, cool and remove shells
Place the sausage meat, herbs, salt & pepper in a large bowl and mix.
Beat the remaining 2 eggs in a bowl.
Spread the ground almonds onto a plate.
Shape a handful of sausage meat around each cooked egg. Aim for a layer about 1/2″ thick.
Coat each sausage wrapped egg in the beaten egg before rolling into the ground almonds.
Place the scotch eggs on a baking tray and bake for 30mins.
