Tasty Paleo Pumpkin Mud Pies

Pumpkin Mud Pies (makes 12)

Ingredients by stage
Stage 1
115g dark chocolate (min 70%), chopped
6tbsp coconut milk
1/2 cup raw cacao powder
6tbsp coconut oil, melted
Stage 2
6tbsp almond flour
1/2 cup coconut flour
1/2tsp baking powder
2 pinches of himalayan pink salt
Stage 3
1 cup maple syrup
1/2 cup olive oil
4 eggs, whisked
1/2 cup pumpkin puree

pre heat oven to 170
melt stage 1 ingredients together, it should be smooth and not too thick
mix stage 2 together
min stage 1,2 & 3 together
Pour into muffin cases that have been greased with coconut oil
15 min in oven (you want them baked, but not dry, should still be gooey in the middle)
